Puff pastry Egg Tarts recipe

This egg tart recipe is a request from ShaMein and my sis.

Ingredients for puff pastry (Serves 12):

Butter 150g
sugar 1/2 tsp
salt 1/2 teaspoon
cold water 80ml
High protein flour 50g
Low protein flour 150g

Filling:

5 eggs, beaten
1/4 tsp vanilla extract
1/2 cup of canned evaporated milk/whole milk
1 cup water
1/3 cup white sugar

Method:
Pastry:
1. Mix high and low protein flour,sugar and salt in a bowl.
2. Cut butter into 1 cm cube size each, then combine with (1).
3. Stir in cold water, butter still remain in the same cube shape.
4. Rub the butter cube into the ingredients.
5. Divide dough into two, use hands to press one of the dough first, then press the other one separately.
6. Place the on top of each, press them together and fold them 3-4 times.
7. Use cling wrap to cover the dough and put it in the refrigerator for 2 hours.
8. Remove it from refridgerator.
9. Make small balls out of the pastry flour by kneading well.
10. Place them into buttered tart molds.

Filling:
1. Boil sugar and water until the sugar is dissolved.
2. Remove from heat and cool to room temperature.
3. Strain the beaten eggs through a sieve and whisk into the cooled sugar mixture. Stir well.
4. Add in vanilla extract,evaporated milk/whole milk.
5. Fill the tart shell.
6. Bake in a preheated oven for 15-20 minutes at 200 degree.
7. Remove from oven.

the tart molds are those stainless steel with jagged edges one rite?

yupe~or else u can use the 12-muffin tray..i used that last time..each egg tart just came out easily with no sticking but do remember to butter the tray first before u place pastry flour into it.

Do they sell it in Coles, Woolies, Hypermarket?

Hi Grace,

If I am kinda lazy, can I substitute the pastry into the packet puff pastry that we can buy in the supermarket? and then cook the custard and put it in? Thanks
